Adam Lawrence • Haute Cuisine Sauvage Pop-Up • 29/07 – 01/08

At the end of July, we are welcoming New York-based chef Adam Lawrence.

From 24 to 26 July, we will host Countryside Dinner at Bird’s Estate — an open-air dinner overlooking the Dnipro River. Then, for four evenings, from 29 July through 1 August, Adam will bring his vision of the “wild side” to the kitchen of Mirali.

What does that mean? Seasonal produce, ingredients he forages himself or carefully sources in person, a deep connection to foraging, and an exceptional understanding of every ingredient’s origin.

Adam refined his craft in some of the world’s most celebrated kitchens:

• Fulgurances Laundromat (New York)

Today, Adam leads the kitchen at ILIS in New York, the restaurant founded by Mads Refslund, co-founder of Noma.

His approach combines the precision of fine dining with the purity of nature. Adam calls this philosophy haute cuisine sauvage — fine dining inspired by the wild.
